Product Description
Professional Bakery & Pastry Retarder/Proofer designed to receive trays, grids, or meshes of size 600 × 800 mm or 2 × 400 × 600 mm, with 2 × 10 levels. Equipped with V-Link tactile control on the door, it offers precise temperature control from -15°C to +40°C and humidity control from 30% to 90%, including a humidity generator with electronic probe.
The unit incorporates all standard technical bread-making programs and ensures product integrity, aroma, and dough quality through adaptive control of temperature, humidity, and airflow. It can operate in manual mode (blocking, slow growth, fermentation) or programmable mode with up to 6 configurable phases.
The cabinet features 60 mm high-pressure polyurethane foam insulation (42 kg/m³) with food-grade PVC panels, a corrosion-resistant evaporator (cataphoresis), and a tropicalized hermetic refrigeration unit. Level spacing is adjustable (36 × 42 mm, 24 × 63 mm, 18 × 84 mm), and the door is reversible on site. The interior is stainless steel, exterior PVC, with a solid (plein) door. Shipped assembled in a latticed wooden crate, powered by 220–240 V / 1PH+T / 60Hz, using R455A refrigerant.
