CRIOLLA is a conservation cabinet specially designed for chocolate
makers, intended to receive 400x600 format supports over 24 levels. It
allows an ultra-precise regulation of hygrometry and temperature and
offers different solutions for conservation, natural defrosting and
tempering of chocolate.
- V-Link control in the door
It incorporates all technical bread-making recipes as standard and
guarantees the integrity and quality of the product thanks to its
precise and adaptive management of temperature, humidity and also air
flow according to the program chosen. It also ensures the optimization
of the cells, the aromas and the taste of the dough.
It is used in manual mode (blocking, slow growth, fermentation) or by
programs (to then define the 6 phases where the temperature, the
hygrometry, the duration are configurable, end on a specific date or
continuously)
